For three days in November, a slice of the Amalfi Coast travels to Singapore. Caruso, A Belmond Hotel is sending its executive chef, Armando Aristarco, to Mett Singapore, where he'll cook alongside Daniele Sperindio, Mett's director of culinary and F&B. The idea is two Italian kitchens, both shaped by the sea, talking to each other across one menu, and a showcase for Caruso's new food philosophy, Antiqua Cucina Nova.

The centrepiece is a six-course, four-hands tasting menu at L'Amo Bistrò del Mare, Mett's signature restaurant. It opens with Sperindio's Crudo di Santa Margherita, then heads south to Campania through Aristarco's takes on cannellini beans, mussels, Neapolitan sourdough and a seafood stew. L'Amo's autumnal Vitello Tartufato follows, and it closes with Caruso's Il Limone, a tribute to the Sfusato Amalfitano lemon. Expect seafood, seasonal produce and dishes drawn from the wider Italian coastline throughout.

This comes from a press announcement, and the residency runs from 13 to 15 November 2026 only; the article doesn't give prices or booking details, so check with the hotel directly. A good one for anyone in Singapore who misses a long coastal Italian lunch, or who has always wanted to taste what Caruso's kitchen does without the trip to Ravello.
