Apotheke opens a botanical cocktail bar at Moxy South Beach, Miami
The New York apothecary-style bar reaches Miami, with nine new plant-led drinks and an unmarked door on Washington Avenue.
Apotheke started in 2008 behind an unmarked oak door on Doyers Street in New York's Chinatown, founded by siblings Heather Tierney and the late Christopher Tierney. The idea comes from the old apothecary: high-proof spirits are used to draw flavour out of herbs, botanicals and other plants, much as remedies once were. After Los Angeles in 2018 and NoMad in 2022, Miami Beach is the fourth outpost, inside Moxy South Beach.
Mixology director Nicolas O'Connor has written nine new drinks just for Miami, served alongside a rotating set of older recipes from the New York and Los Angeles bars. The menu is sorted by mood, from Stimulants and Painkillers to Aphrodisiacs and Stress Relievers. Novia Del Sol pairs calendula-infused vodka with coconut, tamarind, turmeric and Meyer lemon. Dawn Patrol mixes aged rum with ube, coffee and cardamom, and Bilongo is finished with Dubai chocolate bitters. O'Connor says the plants are never an afterthought; the drink is built with them.
The interiors follow Christopher Tierney's taste for the natural world, with a sense of play. Although it sits within the hotel, you reach it through its own unmarked entrance on Washington Avenue, so look for the door rather than the lobby. It's one for anyone who likes a drink with a story behind it.
