Kioku, the rooftop Japanese restaurant at Raffles London at The OWO, relaunches
Chefs Chris Golding and Takehito Shibata bring a new seasonal menu, with refreshed interiors by Tibbats Abel, to the London rooftop.
Kioku, the Japanese restaurant on the rooftop of Raffles London at The OWO, has started a new chapter under executive chef Chris Golding and head chef Takehito Shibata. Golding's link to Japanese cooking goes back to washing dishes in a Japanese restaurant at 13; since then he has worked at Nahm in Bangkok, run the kitchen at Dinings in Tel Aviv and launched Pantechnicon in London, which blends Japanese and Nordic ideas. His approach, as the piece tells it, is about fine produce and knowing when to leave an ingredient alone.
Sushi and Japanese comfort dishes stay at the heart of the menu, now joined by milk bread with mentaiko butter and tuna pastrami, tuna tartare with fresh wasabi, A5 wagyu sirloin with yakiniku and truffle, and grilled Chalk Stream trout with nori and ikura. Puddings include a twig tea crème brûlée with caviar, and the madeleines and Hibiki whisky regulars are staying. Golding says the dishes are meant for sharing.
Design studio Tibbats Abel has reworked the room, using craft displays rather than fixed partitions to make it feel more intimate against the panoramic views, with a new rock garden at the entrance. The source reads much like a press release, so check menus and booking details before going; a good choice for a rooftop dinner with a view.
