Paris seafood restaurant Prunier to open at Saint Roch hotel, Courchevel 1850
The century-old caviar and seafood house leaves Paris for the first time, for an all-day room on the Bellecôte piste.
Prunier has been a Paris fixture since 1924, when Alfred Prunier opened it as a home for seafood and caviar. Its Art Deco dining room on Avenue Victor-Hugo is tied to names such as Yves Saint Laurent and Pierre Bergé. Now, in a partnership with the hotel group Maisons Pariente, it is opening its first restaurant outside the capital, at the group's newest property, Saint Roch, in Courchevel 1850.
The setting is the Bellecôte piste, and the restaurant will serve all day: lunch for skiers coming off the slopes, and slower evening meals for those who would rather linger. The menu keeps the house signatures, with wild salmon, French caviar, tarama, shellfish, crustaceans and seafood platters, alongside French classics. There are newer touches too, including a Prunier burger.
The kitchen will be led by Romain Fornell, who oversees the culinary side of Lapérouse Holding. According to the announcement, his focus is on the quality and provenance of ingredients.
Supper reports the opening as due later this year, so it is worth checking dates before planning a ski trip around it. For anyone who knows the Paris original, it will be interesting to see how it travels to the mountains.
