The Penn, Tom Sellers' new restaurant at the Stoke Park estate, opens
A 48-cover country-house dining room with a garden-led British and French menu marks the first stage of Stoke Park's restoration.
Stoke Park has opened The Penn, the first piece of a larger revival after a long restoration of the estate. It is named after John Penn and run with Tom Sellers, the chef behind the two Michelin-starred Restaurant Story in London. He developed it with chefs Dom Robinson and Tom Phillips and his group, HiStory Hospitality. The à la carte menu draws on British culinary history and classical French technique.
The opening dishes read like a country-house feast with a sense of humour: spiced pig's head terrine with langoustines and brown butter naan, Chiltern Hills venison with quince, a Rossini-style Chateaubriand and duck à l'orange for two, then crème brûlée soufflé or saffron rice pudding. Much of the produce comes from the estate's Kitchen Garden, run by Kate Nannery, formerly of Le Manoir aux Quat'Saisons, so the menu will change through the year.
Studio Shayne Brady took the English country-house dining room as its starting point. Look for the limestone fireplace, the greens and deep plums, and a plaster frieze of the estate's plants and animals. An eight-seat private room is reached through a wine corridor. Four more informal spaces, including a Piano Bar and Tea Room, make up the wider plan. One for a long, special-occasion lunch in the country.
