DoubleTree by Hilton opens its first Singapore hotel at Robertson Quay
A 344-room riverside hotel with a condiment-led local restaurant and a café-bar for coffee, cookies and craft beer.
Hilton has opened its first DoubleTree in Singapore, a 344-room hotel on the Singapore River in the busy Robertson Quay precinct. The announcement, essentially a press release, leads not with the rooms but with the two places to eat and drink at either end of the lobby.
Saus, the all-day restaurant, is built around condiments, its name a playful spin on 'sauces'. More than 40 house-made sauces, dips, marinades and sambals are grouped into four categories, from Singaporean and Southeast Asian flavours to spicy classics and umami-rich marinades, all meant to give familiar comfort food more depth. Dishes include Nyonya prawn salad, beef rendang with Wagyu cheeks slow-cooked in an eleven-spice rempah, seafood bakar with hand-pounded sambal oelek, and bak kut teh. Nostalgic drinks such as Air Bandung, Milo Dinosaur and soya bean sit alongside cocktails and kombucha.
Across the lobby, Brew:33 is a 64-seat café and bar inspired by coffee, cookies and craft beer. Mornings bring speciality coffee from local and regional roasters; evenings, small-batch local beers such as an Osmanthus Pear Cream Ale. Satay and bak kwa sliders keep things simple, and there are floor-to-ceiling windows, living-room seating and a pet-friendly outdoor area.
Worth knowing if you're along the river and fancy local flavours, and handy for dog owners looking for a terrace.
