Benito Gómez is best known for Bardal, his two-Michelin-starred restaurant in Ronda, Spain, and for Tragatá, his tapas place recognised by the Michelin Guide. Now, after nearly three decades of cooking, he has lent his name and approach to Ocean Club, a new Mediterranean restaurant on the beachfront at Regent Phu Quoc in Vietnam.

The menu leans on fish, rice, stews and dishes cooked over fire, built around local produce and meant for sharing, with seasonal plates and a list of wines, cocktails and pairings. Gómez says he didn't want simply to recreate Mediterranean food but to fit his way of cooking to the setting, and that it has nothing to do with tablecloths or formal protocol. Informal, in his view, can still mean real rigour.

Blink Design Group designed the space as an indoor dining room, an adjoining lounge and an outdoor terrace with sun beds. The lighting shifts through the day, bright and open at lunch, softer and more intimate by evening. There will also be live music, wine tastings and seasonal chef-led events through the year.

This comes from the hotel's announcement, so details are light. Worth noting if you're heading to Phu Quoc and fancy a long, unhurried lunch by the sea.
