Denū Hotel & Spa has opened in Downtown Phoenix, the newest member of the Meritage Collection. It has 236 rooms, wellness facilities and a rooftop plunge pool, but the story here is the food, which takes its cue from the Sonoran Desert around the city.

The main restaurant, Sartén Kitchen & Bar, cooks with regional ingredients such as desert citrus, mesquite, chiltepín, blue corn, agave and heirloom grains. Think fire-roasted bone marrow, mesquite cornbread in cast iron, ceviche verde and fire-tossed elote. At weekends there's a sharing brunch for groups of four or more, ending with a cinnamon roll baked to order and finished at the table with warm mesquite honey butter. The bar works smoke, desert botanicals and charred fruit into its cocktails, with live music on the patio.

Up top, Nidos Rooftop Bar looks over the skyline with Latin-Mediterranean small plates, wagyu sliders and drinks like a Guava Frosé, plus DJs into the evening. At street level, Blend Café pours coffee from a custom La Marzocco, with a walk-up window on Adams Street.

This account comes from a trade write-up, so it's light on the rooms themselves. Worth a look if you're in Phoenix and curious about desert cooking, even just for a rooftop drink.
