Alain Ducasse opens Aldabaran, his first Moroccan restaurant, in Rabat
On the 33rd floor of the Mohammed VI Tower, a Riviera-inspired restaurant cooks with Moroccan produce and serves breakfast too.
Alain Ducasse has opened his first restaurant in Morocco, Aldabaran, the signature dining room of Waldorf Astoria Rabat Salé. It sits on the 33rd floor of the Mohammed VI Tower and takes its name from one of the brightest stars in the sky, a nod to the history of Arab astronomy that runs through the hotel's celestial motifs.
The cooking looks to the Mediterranean and the French Riviera: petits farcis, gambero rosso with ricotta tortellini, lamb with caponata. Unusually for a Ducasse restaurant, it also does breakfast, with homemade pastries, his cookpot of eggs and mushrooms topped with Wagyu ham, and madeleines arriving warm in their moulds. Chef Morgan Perrigaud sources from Moroccan growers, among them L'Agrumiste, whose orchard near Fès grows more than 250 kinds of citrus. The wine list pairs Moroccan regions with French bottles from Bordeaux to the Loire.
Pierre-Yves Rochon designed the room, curving it to follow the tower and lining it with floor-to-ceiling windows over Rabat, Salé, the Bouregreg Valley and the Atlantic. Expect handmade zellige, damascene-style detailing, black and gold pottery and black timber floors with an Art Deco edge.
