Since appearing on Top Chef in 2020, Diego Alary has become one of France's best-known online cooks, with millions watching his quick recipe videos. SaltoBar, at 11 Rue Camille Crespin du Gast in the 11th arrondissement, is his first restaurant in Paris, opened with restaurateur Christophe Juville.

The studio PANELA designed the room in the same direct spirit as his cooking. It kept the building's exposed brick, concrete pillars and old metal columns and set them against a gleaming stainless-steel open kitchen, a glossy ceiling and polished cement floors. Banquettes are built from concrete blocks and varnished MDF, and vintage chairs and tables keep things relaxed. The special touch is Portuguese azulejos, a nod to Alary's family roots. The blue-and-white tiles pop up like little discoveries: in a frieze above the banquettes, on the brick walls, set into the floor and behind the kitchen. At night, candles set into the walls and furniture flicker across the tiles and steel.

The Iberian menu is made for sharing and much of it is cooked over fire. Think pan con tomate with Cantabrian anchovies, gildas, honey-glazed sobrassada fritters, crispy suckling pig's ear with romesco, arroz con pollo and grilled bluefin tuna collar with pil-pil sauce.

It sounds like a warm, lively neighbourhood spot.
