The story

Set on the sixth floor of the Ruz Hotel, this relaunched Simone looks out over the historic peninsula and Galata Tower. The kitchen works in an Aegean register, with seasonal plates and a curated wine list, and keeps the spirit of the earlier Simone while moving it forward. Dinner unfolds without hurry, and every plate feels considered. The interior is carefully designed, with a good bar, well-chosen music and acoustics that let conversation carry across the table. Stuffed squash blossoms with goat cheese and tempura zucchini flowers stand out among the dishes, alongside tender octopus, and the sour, refreshing Verde cocktail makes a fitting match. Service is warm and attentive throughout the evening.
