The story
NELOS keeps things compact and precise with eight 15cm pizzas, each baked in 90 seconds. The lineup runs from No. 401 with San Marzano tomato, fior di latte, and basil to combinations with nduja and honey, mortadella and Aegina pistachio, or smoked aubergine mousse with xinomyzithra cream. The small format encourages mixing a few varieties in one order, and four-piece boxes come with dips. This Athens takeaway-and-delivery shop also turns out rounds in plain view, adding a bit of kitchen theatre to a tightly focused operation on Efranoros.
