Araf İstanbul keeps just 12 seats around an open kitchen, so dinner unfolds within arm’s reach of the grill, plating, and final explanations. The menu repeatedly returns to offal and lesser-used cuts—crispy brain, grilled tongue with spinach, kidney, cheek, liver, heart, sweetbread—handled with modern technique while keeping their original character in view. The room feels small, calm, and intimate, with chefs presenting dishes and discussing ingredients and cooking methods as they arrive. Counter seating puts the preparation front and center, and the concise format gives the meal a personal rhythm rather than a formal fine-dining distance.
